Fish collagen is a hot topic these days because it avoids diseases and religious concerns linked to land animals. The scales of M. fusca gave 1. 72% and 11. 72% of collagen by weight, respectively. Both types are type I collagen, which has a strong structure. What's more, they can handle higher temperatures than many other collagens.
This study shows that pepsin-soluble collagen (PSC-MF) could be a good alternative to collagen from land animals. It has all the benefits without the drawbacks.
