In these samples, they found 573 different hydrophilic compounds. The most common were alkaloids, which can range from 26, 221. 76 to 36, 701. 75 milligrams per kilogram. Next were soluble sugars, ranging from 21, 137. 25 to 26, 112. 85 mg/kg. Organic acids, amino acids, nucleotides, and nucleosides were also present but in smaller amounts.
During the tea processing, interesting changes happen. Sugars, acids, nucleotides, and nucleosides increase. But amino acids decrease, and alkaloids only slightly increase. This study helps us understand more about what's in FBT and how processing changes its composition.
