Gizzard, a favored delicacy in Cameroon, is consumed by individuals of all ages. However, recent research suggests that this seemingly harmless chicken part may harbor significant health hazards.

Study Reveals Alarming Contaminants

A comprehensive study examined gizzards from chickens raised in three distinct regions of Cameroon. The research focused on detecting two types of mycotoxins—aflatoxins (AFT and AFB1) and ochratoxin A (OTA)—alongside several heavy metals, including:

  • Chromium
  • Nickel
  • Arsenic
  • Cadmium
  • Lead
  • Mercury

Shocking Findings

All tested gizzards contained mycotoxin contamination, with aflatoxin levels varying across regions. The highest concentrations were found in the West region. Additionally, heavy metals were detected, with cadmium, chromium, and mercury being the most prevalent.

Health Risks and Vulnerable Groups

The study also assessed consumption patterns and potential health risks. Key findings include:

  • Adults and the elderly were more exposed to mycotoxins.
  • Children faced higher risks from heavy metal exposure.
  • Contaminant levels could pose serious health risks, particularly for children.

Call for Better Regulation

This research underscores the urgent need for improved monitoring and regulation of chicken products in Cameroon. It is crucial for the public to be informed about these risks and for authorities to take decisive action to ensure food safety.
