New names, last runs, and retro treats: Springfield's food scene saw some shifts lately

Springfield, MO, USAMonday, May 11, 2026
Springfield just got a flashy new sign downtown. A once-popular pizza-and-fun spot called America’s Incredible Pizza has dropped that name and now waves a fresh flag as Incredible Food and Fun. The change signals twenty-five years of growth, moving from endless pepperoni to a full menu of rides, games, and photo-ops. Built in 2001 as Incredible Pizza Company, the chain started life centered on buffet pizza. Today it rules an eighty-thousand-square-foot indoor playground in Springfield, Memphis, Oklahoma City, Tulsa, and San Antonio—all areas packed with smoke-free, no-alcohol activities and families chasing fun after lunch.
Meanwhile, a Venezuelan food truck named Caracas House served its final arepa this month. Owner Luis Sulbaran, who moved to Missouri at sixteen and later returned after a stint in Miami, opened the truck back in 2023. He framed the menu as a heartfelt slice of home for growing Latino communities weary of missing the flavors of Venezuela. When he posted the truck’s closing day on Facebook, patrons filled the comments with hope that a permanent kitchen might be next. As of today, nothing’s been confirmed. Across town, a small coffee chain is playing nostalgia dealer every Wednesday in May. Scooter’s Coffee is handing out limited-edition “camp badge” patches reminiscent of lazy summer days from the 1990s. All you need is a mid-morning stop after 11 a. m. to grab one while they last. They’re also rolling out a seasonal menu—matcha cream soda, s’mores lattes, and a grape energy drink topped with Red Bull—to fuel the throwback vibe. Scooter’s three Ozarks locations are bracing for steady lines of grown-ups reliving childhood summers and first-timers discovering what retro camp swag feels like.
